What is SAF Levure Yeast?
Saf Levure is a type of dry baker's yeast widely used in Middle Eastern pastries, as well as for making bread and viennoiseries.
It is highly economical, as only about 10 grams are needed for 500g of dough preparation.
This dry yeast serves as a substitute for traditional fresh yeast, typically sold in small cubes in the refrigerated section of supermarkets, or baker's sourdough. One of its key advantages is its longer shelf life (approximately 2 years) and its ability to be stored at room temperature (25°C).
Before using, the yeast granules need to be rehydrated by following the instructions on the packaging. This involves mixing them in a small amount of warm liquid (water or milk) at an optimal temperature of 38°C.
Important: yeast is sensitive to both heat and salt. It will die if exposed to temperatures above 50°C and its fermentation process can be inhibited by salt.
